Demptos, the french coopers belonging to François Frères, have announced to market a very unusual new kind of barrel. Baptized "Paradoxe", it's wood is strongly heated over a longer lapse of time, without therefore releasing too much color and toasted aromas into the wine. How this is achieved, remains a well-protected company secret. Spirit and purpose of this new product development, which needed two years of intensive research to become marketable, is to preserve the intrinsic aroma of the wine during barrel-ageing, to reduce the level of wood and coco aromas but to preserve, at the same time, the positive results of barrel ageing which result from oxygen contact and enhancement of specific tannins. The new barrel will be more expensive than traditional ones and should be used preferably for premium and super premium wines.
